This recipe was cultivated by my mother and my kids just love It! People will never know that there are no eggs or milk in this recipe. They are crisp on the outside and soft and fluffy on the inside. I hope you enjoy them as much as we do!
1/4 cup aquafaba (chickpea water)
1 3/4 cup almond milk (or any plant based milk)
1/8 cup applesauce
1/2 cup melted and cooled coconut oil (I like refined)
2 cups AP flour
4 tsp baking powder
2 tbsp sugar
1 tsp salt
1. Heat your waffles iron. Beat aquafaba, applesauce and oil into milk until frothy.
2. In a separate bowl mix all your dry ingredients.
3. Mix wet ingredients slowly into dry ingredients until fully incorporated.
4. Pour batter with a cup or pitcher into center of your sprayed waffle iron and bake until steaming stops, about 5 minutes. Remove carefully and enjoy!
Mom Tip: You can make a bunch of these ahead of time and freeze them. And when you need a quick breakfast, pop them in the toaster or oven for fresh tasting waffles!
