This cheese sauce is easy to make and so creamy, you'll think you're eating the real thing! Use this for Mac&Cheese or add some ingredients (like jalapeños) to make a spicy delicious queso dip for that tailgate party! I hope you enjoy this as much as my family and I do!
1/2 small Vidalia onion, diced
2 cloves garlic minced
1 carrot diced
1/4 cup oil
1/2 cup flour
1 tbsp nutritional yeast
1 cup almond milk (or any plant based milk)
2 tbsp lemon juice
1 can coconut milk
Salt & pepper to taste
1. Place oil in hot pan and saute onions, garlic and carrots until soft. Season as you saute.
2. Add lemon juice to almond milk and set aside.
3. Add flour and nutritional yeast until vegetables are coated and then slowly add milks (almond and coconut). Stir until creamy. Add salt and pepper as needed.
4. Blend all ingredients with an immersion blender until creamy. Serve immediately on pasta or as dip.
