My husband wanted some ice cream and I had coconut milk and aquafaba... The result was a delicious and creamy eggless and dairy free mixture. I hope you enjoy it as much as my family has!
***You will have to keep your coconut milk upside down in your frig over night for this to work.
1/2 cup Aquafaba(chickpea water)
1 tsp cream of tartar
1 can coconut milk (left upside down in fri g over night)
1/2 cup powdered sugar
1 tsp vanilla or 1 vanilla bean
Pinch of salt
For Chocolate Ice Cream:
1/4 cup cocoa powder
1. In a standing mixer add aquafaba cream of tartar and mix until soft peaks form. Then add sugar and mix until smooth.
2. Open your coconut cream can from the bottom and you will see the coconut cream separated from the water. Carefully scoop the cream and add to the aquafaba meringue. Mix until smooth.
3. Add remaining ingredients (and cocoa powder if making chocolate ice cream) and mix until fluffy and smooth.
4. Put in freezer for 4 hours or over night in freezer safe container.
