This recipe is so easy and delicious! My little one LOVES this and says "mmm" for every bite! I hope you all enjoy it as much as we do!
2 16oz cans Chickpeas(garbanzo, save water for other recipes)
1/2 red onion, small diced
2 cloves garlic, minced
1/2 tsp coriander
1/2 tsp cumin
Salt/Pepper to taste
1/3 cup Eggless mayo (I used "Just Mayo")
1 tbsp brown mustard
2 tbsp honey
1 tbsp chopped parsley
1/4 cup chopped grapes (opt)
1. Saute chickpeas with onions and garlic until tender flavor with salt and pepper. Allow to cool.
2. Mix in remaining ingredients and flavor as needed. Serve immediately on toasted bread or chill for the future. Enjoy!
