These chick patties are easy to make and taste amazing!!
1 16oz can chickpeas (save the brine for your aquafaba recipes!)
1 package of firm tofu
2 cloves garlic
1/2 small onion diced
Salt and pepper to taste
2 cups Panko breadcrumbs
For Tofu Marinade:
1 cup soy sauce
1 /2 cup brown sugar
1 garlic clove mince
Pepper to taste
2 tsp minced ginger
1/2 cup oil
First small dice your tofu then place in a large pan with high sides. Then make the marinade for your tofu. Mix all ingriedents together in a mason jar and shake until well blended. Then pour over tofu, cover and let sit in frig for at least 3 hours (for best results let sit over night)
In a food processor, mix all ingredients (including tofu) and pulse until consistency of hummus. Place mixture in large bowl and add 1 cup of the breadcrumbs. Mix together until mixture is easy to form into patties.
Place remaining breadcrumbs on a plate and lay each Pattie in to cover lightly with breadcrumbs.
Fry patties in a fry pan with oil (veg, coconut, sunflower etc) on med heat until golden brown. Serve immediately.
