¼ cup aquafaba
¼ teaspoon cream of tartar
¼ teaspoon salt
½ teaspoon mustard
¼ teaspoon lemon juice or apple cider vinegar
¾ cup oil (I prefer avocado oil)
Combine the aquafaba, salt, mustard, and lemon juice in a working glass with a hand held immersion blender (I use a Breville Control Grip). Add the oil in a slow trickle while continuing to run the blender until all of the oil is incorporated. Add more oil in a slow trickle if necessary for desired thickness.
